Da Hong Pao “Big Red Robe” is one of the most famous rock oolongs grown in the Wuyi Shan area in Fujian province. Rock oolong also call cliff tea “Yan Cha” refers to style of oolong tea produced in the restricted area of the Wuyi Mountain and benefits from a specific terroir resulting in a unique rock rhyme sensation, minerality and floral note.
Our Da Hong Pao is made from a single cultivar Bei Dou. Rock oolong leaves were harvested by hand, withered on a bamboo tray, shaken and left to oxidize to approximately 70%. The “kill green” process stops the enzymic oxidation and is followed by rolling, drying and tedious sorting by hand. The last and crucial step is the roasting which takes place a few days or few weeks after harvest and consists of heating up the leaf one more time. Our Da Hong Pao was roasted two times, first at low temperature and then at medium heat above a charcoal fire.
